What makes this a "brownie" cookie?
In addition to classic cookie ingredients, we also threw in a box of brownie mix! Paired with the multiple kinds of chocolate chips, the brownie mix turns these cookies into an extra-fudgy, super chocolatey treat with that classic brownie finish on top.
What chocolate chips should I use?
That's totally up to preference! We chose a mix of semi-sweet and dark chocolate, but if you're a fan of a sweeter chip, you can always throw in some milk chocolate. We recommend adding in a few different kinds to really up the chocolate game in your brownie cookies. Plus, who ever complained about "too much" chocolate?
What causes a flat brownie cookie?
If your cookies turn out too flat, you might not be letting them chill for long enough before baking. For a fluffier cookie, make sure you're giving your dough adequate time to chill in the fridge—20 minutes at least!

- Step 1Preheat oven to 350°. Line 2 medium sheet trays with parchment paper and grease with cooking spray.
- Step 2In a large bowl, whisk together butter, flour, salt, vanilla, and cocoa powder. Add eggs one at a time, whisking for 1 minute after each egg. Mix in brownie mix and water, then fold in chocolate chips. Scoop cookies onto sheet trays, using about 2 tablespoons batter for each and separating them two inches on the tray. Refrigerate for 20 minutes.
- Step 3Bake cookies for about 12 minutes, just until they begin forming a crust on top. They will continue to cook slightly as they cool. If you like crispier cookies, bake them for an extra minute. Let cool 1o to 15 minutes before serving.
