If it were up to Barbie, she would be sitting outside her dream house sipping cocktails all day. That’s great for her! But what about us? Well, we could always use a cocktail or mocktail, and whether it’s pink or rainbow, doesn’t matter—just pass it this way. Plus, we figured if Barbie had to choose between booze or bubbles, she might opt in for both, depending on the day. Think of a frothy pink, citrus-forward, fizzy cocktail that’s perfect to sip in the backyard with friends or while throwing your summer pool party. It’s similar to a Pink Lady, except with tequila-forward orange liqueur and a little club soda to top it off.
Pro tips:
- If you don’t have an orange-flavored tequila, you can substitute any flavored liqueur as long as it’s clear; raspberry would be a great option.
- Club soda is by composition a “saltier” carbonated water than seltzer. You can use either one in this beverage.
- Pink, gold, and clear white sprinkles or edible glitter are what make this as girly and Barbie-approved as possible. You can easily order gold glitter here.
- We opted for a coupe glass, but you can use other glasses with a wider frame, like a martini or rocks glass.
Storage:
You’ll love making this ahead of time because it’s so simple. Just make sure to leave out the egg white until you’re ready to serve.
