Strawberry Shortcake Banana Bread

Ingredients
- 200 g
butter, half melted and half softened, plus more for buttering pan
- 200 g
plain flour, plus for flouring pan
- 1 tsp.
bicarbonate of soda
- 1/4 tsp.
salt
- 200 g
sugar
- 60 ml
buttermilk
- 1 tsp.
vanilla extract
- 1
egg plus 1 egg yolk
- 150 g
sliced strawberries, plus more for serving
- 3
super ripe bananas, mashed
Freshly whipped cream, for serving
Directions
- Step 1Preheat oven to 180°C and butter and flour a 9-x-5" loaf tin.
- Step 2In a large bowl, whisk together 125g flour, bicarbonate of soda, and salt.
- Step 3In another large bowl, combine 150g sugar, 110g butter, buttermilk, vanilla, egg and egg yolk until smooth. Pour wet ingredients over dry and stir until combined, then fold in strawberries and mashed bananas.
- Step 4Make crumb topping: Combine remaining flour, remaining sugar, remaining butter, and a pinch of salt.
- Step 5Transfer batter to prepared baking dish and top with crumb topping. Bake until deeply golden and a toothpick comes out clean, about 60 minutes. Let cool at least 10 minutes before serving.
- Step 6To serve as a shortcake, stack banana bread with freshly whipped cream and strawberries.
