Lasagne-Stuffed Courgette

Lightening up lasagne with courgette is one of our fave low-carb dinner hacks. Fill up the courgette with everything you love about lasagne and enjoy it guilt-free!

Ingredients

large courgette, halved lengthwise
1 tbsp.
extra-virgin olive oil
1/2
onion, diced
2
cloves garlic, crushed
225 g
beef mince
Salt
Freshly ground black pepper
225 g
marinara sauce
Pinch of crushed chilli flakes
100 g
ricotta
100 g
shredded mozzarella
Freshly chopped parsley, for garnish

Directions

1. Step 1Preheat oven to 180°C (160ºC fan). Score courgette (like you’re dicing an avocado) and scoop out insides.
2. Step 2In a large pan over medium-high heat, heat oil. Add onion and cook until soft, 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add beef and cook until no longer pink, 5 minutes. Season with salt and pepper. Add marinara and stir until combined. Add crushed chilli flakes.
3. Step 3Spread ricotta on bottom of each courgette boat, then spoon beef sauce over ricotta layer and sprinkle with mozzarella.
4. Step 4Bake until courgette is tender and cheese is melty, 15 minutes.
5. Step 5Garnish with parsley before serving.
