Ingredients
For the caramel banana topping
- 80 g
light brown sugar
- 80 g
butter
- 1 tsp.
vanilla extract
- 2
bananas, peel removed and sliced in half
For the cake
- 190 g
self-raising flour
- 30 g
cocoa powder
- 1/4 tsp.
salt
- 190 g
light brown sugar
- 1
egg
- 80 g
butter, melted and cooled
- 250 ml
coffee, cooled
Directions
- Step 1Preheat oven to 200ºC (180°C Fan), and grease and line a 2lb loaf tin.
- Step 2To make the caramel banana topping. Add the light brown sugar, butter and vanilla to a saucepan and set over a medium heat. Once the butter is melted, stir and bring to a simmer for 2-3 minutes or until the mix starts to turn a darker caramel colour.
- Step 3Pour into the prepared cake tin and arrange the bananas cut side down. Set aside.
- Step 4In a large bowl combine the self raising flour, cocoa powder salt and combine with a whisk. Set aside.
- Step 5In another large bowl, add the light brown sugar, egg and butter. Stir to combine. Add the combine then mix until silky.
- Step 6Add the wet ingredients into the dry and stir until no lumps remain. Pour over the bananas and caramel and bake for 40-45 minutes or until cooked through. Remove from the oven and leave to cool for 20 minutes before turning out. Enjoy!
