In this episode of Royal Eats, former royal chef Carolyn Robb makes a delicate crown-shaped pavlova filled with crème fraîche and tropical fruits in honor of Princess Diana.

Robb shares some of her favorite memories with the late Princess, including when she first met her at Kensington Palace for the job interview. Despite initially feeling nervous, Robb soon felt at ease with Princess Diana's friendly demeanor.

Throughout Robb's tenure as a royal chef, Princess Diana would frequently come down to the kitchen to chat with the staff. She would sometimes even prank her security guards by hiding their radios in the refrigerator.

In honor of her wonderful memories of Princess Diana, Robb pipes the meringue in the shape of a crown and decorates it with pearl sugar and silver sprinkles. When Prince William and Prince Harry were young, they would help Robb in the kitchen by piping meringues.

She builds the pavlova by layering the baked meringues with crème fraîche and an arrangement of Princess Diana's favorite tropical fruits. Robb's recipe is extremely versatile, though, and you can use whipped cream or Greek yogurt in place of the crème fraîche as well as swap out the fruit for your own favorites.
